Ginger Honey

8 ounces fresh ginger
2 pounds honey (the darkest you can find)Recipe
Cut any withered bits off the ginger, then cut it into slivers no wider than a quarter. Put the ginger into a food processor and grind it until it's as smooth and unfibrous a puree as you can get. Now pour the honey into a large heavy saucepan. To get out the last 1/2 cup or so, heat the jar in the microwave for 30 seconds; the honey will pour like water. Stir in the ginger. Over low heat, stirring frequently, bring to a boil. Immediately reduce the heat to low and simmer the mixture for 20 minutes, still stirring frequently.
While all this is going on, sterilize a couple of jars. Or just wash and sterilized the jars the honey came in, if you're planning to keep it all. Can either leave unstrained or strain. To strain, line a sieve or strainer with cheesecloth and strain the honey into a bowl, pressing down hard on the mass of ginger to extract the last drops of flavor. Pour the honey into a sterilized jar, cool it and cap it tightly. It will keep indefinitely. Be sure to label the jar GINGER Honey. Makes 1 quart.
