Jam: Gingered Pear Jam

1 three inch cinnamon stick
1 teaspoon whole cloves
6 cups peeled, cored, chopped pears
1/4 cup lemon juice
4 1/2 cups sugar
1/4 cup chopped candied ginger
Recipe
Chop pears in food processor with shredding disk. Prepare preserving jars. Put cinnamon stick and cloves into a cheesecloth bag and tie the top with a string. Combine pears and lemon juice in preserving pot. Bring to a boil over medium heat. Cover and simmer for 10 minutes, stirring often. Add cheesecloth bag of spices an d the sugar and ginger; stir until sugar is dissolved. Cook over medium heat, stirring often, for 20-25 minutes, or until mixture thickens. Be careful, as jam may tend to stick to bottom of pot towards end of cooking time. Test for set if desired.
Remove from heat and discard spice bag. Stir jam and skim off foam if needed. Ladle the jam into hot, sterilized jars, leaving 1/2" head space. Wipe rims clean. Seal according to manufacturer's directions. Process jars in boiling water bath for 10 minutes. Makes about 6-7 8-oz jars.
CHEESECLOTH SPICE BAG: Allows for easy removal of whole spices once preserves are cooked. Cut double thickness of cheesecloth about 4" square. Place spices in center, and gather up corners to form a pouch. Tie it tihgtly at top with a string. To extract all the spicy goodness, place spice bag in small bowl when you remove it from the preserves. Tilt bowl over preserving pot and use back of spoon to press bag and allow flavored juices to run back into the pot. Discard spice bag.
