    Tips: How to test for gel

    Temperature Test: using a candy thermometer is easiest and most accurate method. Stir the hot mixture, then immerse the thermometer in it, making sure the bulb does not touch the bottom of the pot. Continue cooking until the temperature reaches 220ºF.

    Cold Plate Test: Place a small plate in the freezer. Towards the end of the cooking time, place a spoonful of the hot mixture on the plate. Return the plate to the freezer for 2 minutes, then check to see if mixture has gelled.
