Jam: Kiwi Lime Jam

8 large firm-ripe kiwi fruits
2 tablespoons finely grated lime zest
6 tablespoons fresh lime juice
3 cups sugar
few drops green food coloring
Recipe
Peel kiwis and shred them in food processor, or slice them and then chop finely. Combine all ingredients except for food coloring in preserving pot. Let stand for 30 minutes, or until sugar is dissolved and juices begin to flow. Prepare preserving jars. Bring fruit to a full boil over medium-high heat. Boil rapidly, stirring constantly, for 15-20 mninutes. Test for set using a thermometer or the plate test.
Remove from heat, stir and skim off foam if needed. Carefully add 1-2 drops of food coloring if desired.. start with 1 and only add more if needed. Pour jam into hot sterilized jars, leaving 1/2" of head space. Wipe rims clean. Seal according to manufacturer's directions. Process the jars in boiling water bath for 10 minutes. Note: one lime will yield approximately 2 tbl. lime juice and 2 tsp. of lime zest. Makes about 3 8-oz. jars.
