Jam: Low Cal Fresh Strawberry Jam

1 envelope unflavored gelatin
1/4 cup water
1/4 cup orange juice
2 tablespoons sugar or honey
2 tablespoons lemon juice
1 thin slice lemon (1/8" thick)
2 cups (1 pint) strawberries, sliced
Recipe
Be certain strawberries are well cooked through or jam will not last more than 2-3 days. In a 1 cup metal measuring cup, soften gelatin in water and orange juice. Place cup in a larger pan with simmering water and stir until gelatin is dissolved. Meanwhile, in a saucepan, place the remaining ingredients and simmer mixture, stirring now and again, for about 10 minutes, or until strawberries are cooked through. Discard lemon slice. Stir in gelatin mixture until thoroughly blended and simmer for 30 seconds, stirring. Allow to cool slightly and place jam in a jar with tight fitting lid. Store in refrigerator. Makes about 2 cups.
