Preserves: Microwave Cherry Preserves

3 cups pitted sweet cherries, chopped
1 cup water
1/4 cup powdered pectin
2 teaspoons lemon juice
3 cups sugar
1/2 teaspoon almond extract
Recipe
Combine cherries, water, pectin and lemon juice in microwave safe casserole. Cover with plastic wrap and microwave on high until mixture reaches a boil, 6-8 minutes. Stir in sugar and almond extract. Cover and return to boil, cooking 3 minutes after boil is reached. Stir and return to microwave uncovered. Cook until preserves sheet from spoon, about 3 minutes. Remove from microwave and remove foam from top. Pour hot preserves into hot, sterilized jars, leaving 1/4" head space. Process 10 minutes in boiling water bath, counting from time water comes to a boil. Or store in fridge or freezer. Makes about 3 half pints.
