8 cups sliced strawberries
6 cups sugar
1/3 cup lemon juice

Prepare preserving jars. In your preserving pot, crush berries lightly with potato masher. Simmer over medium low heat for 10 minutes. Add sugar and lemon juice, stirring until sugar is dissolved. Increase heat to medium high and boil rapidly, stirring often, for 15-20 minutes or until slightly thickened. Test for set if desired. Remove from heat. Stir for 2-3 minutes and skim off foam if needed. Pour jam into hot, sterilized jars, leaving 1/2" head space. Wipe rims clean. Seal according to manufacturer's directions. Process jars in a boiling water bath for 10 minutes. Jam is slightly soft and runny. Makes 6 8-oz. jars.
