2/3 cup oil
2/3 cup flour Recipe
Use the amounts of oil and flour your recipe calls for. Be sure to stir often so as not to burn the roux. Combine oil and flour in a deep bowl, stirring well. Microwave, uncovered, at high power for 6 min., stirring after 3 min. Stir well. Microwave, uncovered, at high power 2-4 min. until roux is the color of a copper penny, stirring every 30 seconds.
