2 pounds royal ann cherries
2 tablespoons salt
1 teaspoon powdered alum
1 quart water
2 1/4 cups sugar
1 1/2 cups water
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons almond extractRecipe
Pit cherries and place in glass mixing bowl. Dissolve salt and alum with the quart of water; pour over cherries and let soak overnight. Drain, and rinse in cold running water until the salty taste is gone. Completely drain all the water. In glass pot, bring sugar, the 1 1/2 c. water to boil. Turn off heat and gently stir in cherries, coating all. Let stand, covered only by single layer of cheesecloth, for 24 hours. Return to boiling. Turn off heat. Stir in lemon juice and almond extract. Pack hot cherries into clean jars. Store up to 4 mos in the fridge.
