Soup: Black Bean Soup Mix

1 pound dried black beans
1/2 teaspoon black pepper
1 bay leaf
1 teaspoon dried thyme leaves
1 teaspoon cumin powder
4 beef bouillon cubes, crumbled
Recipe
Place black beans into airtight container. Combine spices and bouillon in small bowl, stir til blended. Place spice mix in airtight container.
Black Bean Soup (serves 8): 1 pound dried black beans, 2 tbl. veg oil, 1 medium onion (chopped), 1/2 pound polish sausage, 1 package black bean soup mix, 8 c. water, salt and pepper. In stockpot, soak beans in water overnight. Drain beans and reserve. In large stockpot, heat the oil, and add onion and sausage. Saute mixture over medium high heat until onion is translucent. Add the beans and Black Bean Soup Mix. Stir the mixture and add the water. Reduce the heat to a simmer, and cook partially covered for 2 hours. Season to taste with salt and pepper.
