Artichoke Salad with Caper Dressing

List of Ingredients
1 9 oz package frozen artichokes
1/4 cup mock sour cream
1/4 cup fat free mayo
3 tablespoons capers, drained and chopped
1 teaspoon lemon juice
2 teaspoons Dijon mustard
1 head Boston bibb lettuce
Mock Sour Cream:
1 8 oz nonfat cottage cheese
1 tablespoon lemon juice
1 tablespoon nonfat yogurtRecipe
Mock Sour cream: place all in blender and blend til smooth. SALAD: Cook frozen artichoke hearts according to package. Drain; cover and chill in freezer 15 minutes. Meanwhile, in bowl stir together Mock Sour Cream, mayo, capers, lemon juice and mustard. Line 4 salad plates with bibb lettuce leaves. Arrange artichoke atop lettuce. Drizzle dressing over artichokes. Serves 4.
