    Avocado with Sweet Red Pepper Sauce

    1 medium sweet bell pepper
    1 clove garlic, minced
    1 tablespoon olive oil
    1 tablespoon red wine vinegar or sherry
    1/8 teaspoon salt and black pepper
    2 medium avocados

    Recipe



    Roast red pepper over burner or under broiler until blackened on all sides, about 10 minutes. Place in paper bag, seal tightly, and set aside for 10 minutes to steam the skin loose. Peel under cold running water. Discard the skin, seeds and core. In electric blender or food processor, blend the red pepper, garlic, olive oil, vinegar, salt and pepper until smooth, about 1 minute. Peel and halve the avocados and remove the pits. Slice each piece lengthwise into 5 wedges. Place an avocado half on each plate, and spoon 2 tbl. sauce over it. Serve immediately. Serves 4.
