    Bean/Grain: Bulgur Salad with Tomatoes & Lemon Vinaigrette

    List of Ingredients

    1 cup bulgur, cracked wheat
    2 cups water
    1 cup chopped green onions (use the whole onion)
    1 tomato, peeled, seeded and chopped
    3 tablespoons chopped parsley
    salt and pepper to taste
    1/4 cup olive oil
    1/3 cup lemon juice
    1 clove garlic, minced

    Recipe

    In a saucepan, bring water to boil and slowly add the bulgur, while water continues boiling. Stir, lower heat and cover saucepan, and cook bulgur at a simmer until liquid is absorbed, about 10-15 minutes. Continue cooking bulgur, stirring, for several minutes until grains become dry and fluff up. Place bulgur into a deep bowl and allow to cool. Toss with onions, tomato, parsley and seasoning. Shake together oil, lemon juice and garlic, and pour dressing over salad. Serve in small bowls or on a bed of lettuce. Serves 6.
