Bean/Grain: Cracked Wheat Garden Salad

List of Ingredients
3/4 cup cracked wheat bulgur
1 1/2 cups boiling water
2 cups broccoli florets
1 cup halved snow peas
1 small red bell pepper, seeded, cut 1" pieces
1 cup pitted prunes, coarsely chopped
1/3 cup sliced green onions
1/2 cup prepared oriental dressing
1 tablespoon red wine vinegar
Recipe
In large bowl combine wheat and water; set aside at least 30 minutes. Drain wheat in strainer and return to bowl. Meanwhile, in another bowl cover broccoli with additional boiling water; set aside 5 to 10 minutes; drain. Combine all ingredients in large bowl; toss to mix thoroughly. Makes 4 servings (about 6 cups)
