Bean/Grain: Crunchy Cabbage & Chickpea Salad

DRESSING:
1/4 cup oil
1 tablespoon sugar
1/2 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon cumin
1 dash cayenne pepper
SALAD:
3 cups thin sliced cabbage
1 cup thinly sliced red cabbage
1/4 cup sliced green onions
1/4 cup chopped fresh parsley
3 small carrots, very thinly sliced
15 ounces garbanzo beans, drained, rinsed
3 ounces ramen noodle soup mix
Recipe
In small nonmetal bowl, combine all dressing ingedients and mix well. In large bowl, combine all salad ingredients, except soup mix; toss to mix. Discard seasoning packet from soup mix and crumble noodles. Add to cabbage mixture, then add dressing; toss to coat. Serves 4.
