3 cups cooked quinoa
1 stalk celery, chopped fine
1/2 cucumber, chopped fine
1 carrot, grated
1/2 cup dried Greek olives, chopped
1/4 cup fresh basil, chopped fine
1/2 cup sweet red pepper, chopped fine
cumin parmesan salad dressingRecipe
Combine ingredients and toss with 4-6 tbl. of your favorite dressing. Serves 4.
