    List of Ingredients





    1 cup dry bulgur wheat
    1 1/2 cups boiling water
    1 teaspoon salt
    1/4 cup lemon juice
    1/4 cup olive oil
    1 cup chopped fresh parsley
    1 cup chopped mint
    2 tomatoes, chopped
    2 cloves garlic, chopped
    1/2 cup chopped scallions
    pepper to taste

    Pour boiling water over bulgur wheat and let stand approx 1/2 hour until wheat is fluffy. Drain or squeeze liquid from wheat. Add remaining ingredients and mix well. Chill overnight before serving.
