    1/4 cup walnut pieces
    3 tablespoons reduced fat mayonnaise
    3 tablespoons plain nonfat yogurt
    1 1/2 tablespoons fresh lemon juice
    1/4 teaspoon grated lemon peel
    2 teaspoons curry powder
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1/8 teaspoon cayenne pepper
    1 yellow skinned apple
    1 red skinned apple
    1 tart green apple
    1 cup chopped celery
    1/3 cup dried currants
    1/2 cup diced smoked ham (or cooked bacon)
    1 head bibb lettuce

    Recipe



    Preheat oven to 350 ºF. Toast walnuts on small baking sheet, stirring once or twice, until golden and fragrant, about 5 minutes. Let cool. In a small bowl, whisk together the mayonnaise, yogurt, lemon juice and peel, curry, salt, pepper and cayenne. (Dressing can be made and refrigerated up to 2 days ahead.) Core the apples, but do not peel them. Cut the apples into 3/4" dice and place in a mixing bowl along with the celery and currants. Add the dressing and toss to coat completely. Refrigerate the salad for at least 30 minutes (up to 2 hours). Just before serving, stir in the ham. Serve salad spooned into Bibb lettuce leaves, sprinkled with toasted walnuts. Makes 6 side-dish servings.
