    2 large cucumbers, peeled, seeded, chopped
    1 medium onion, finely chopped
    1 tablespoon salt
    2 cups plain nonfat yogurt
    1/2 teaspoon ground cumin
    black pepper to taste

    Recipe



    Mix the cucumber, onion and salt in a bowl; let stand for 1/2 hour. Drain off liquid, then rinse well with cold water and drain. Soak in cold water to remove as much of the salt as desired, then drain again very well. Add the yogurt, cumin and pepper. Refrigerate or at least 2 hours before serving. Serves 4.
