    Dr. Weil's Turkish Spinach Salad

    List of Ingredients




    1 pound fresh spinach, washed, stemmed
    2 fresh tomatoes, sliced
    6 scallions, trimmed, thin sliced
    5 tablespoons plain yogurt
    2 tablespoons extra virgin olive oil
    2 cloves garlic, minced
    1/2 teaspoon dried thyme
    salt and black pepper to taste

    Recipe



    Dry the spinach, tear it into large pieces, and combine it with tomatoes and scallions in a bowl. Combine yogurt, olive oil, mince garlic and thyme, adding salt and pepper to taste. Add the yogurt mixxture to the veggies and mix well. Season to taste with salt and pepper. Serves 4.
