    1/2 pound bean sprouts
    1 cucumber, peeled, seeded, chopped
    1 bunch radishes, sliced
    1 head fennel, sliced
    1 carrot, grated
    sliced scallions to taste
    rice vinegar for tossing

    Recipe



    Combine all, toss with rice vinegar to taste. Serve on a bed of lettuce if it is available at a decent price.
