    Greek Cucumber Salad

    2 large cucumbers, peeled, cut in half -- seed and slice
    1/2 cup plain nonfat yogurt
    dill weed, to taste
    1 pinch salt and pepper

    Recipe



    Combine all the ingredients and chill at least 15 minutes. Stir and sprinkle with more dill, serve cold. Please watch the salt it draws out the water in the cucumber and can make your salad runny. If you make this dish ahead, salt it just before serving it. Serving Suggestions: This cool creamy salad is excellent with shishkabob, lamb, falafel or any spicy food like curry. It can also be made into a dip if you chip the cucumber into a fine dice and drain your yogurt. To drain your yogurt, place a coffee filter in a strainer and let it sit for a few hours, covered in the fridge. This goes very well with hummus and pita chips.
