    List of Ingredients




    1 tablespoon cider vinegar
    1 tablespoon lemon juice
    1 teaspoon Dijon mustard
    1/2 teaspoon salt
    1/8 teaspoon black pepper
    1/3 cup olive oil
    3 tablespoons minced parsley
    8 ounces mushrooms - trim, rinse, slice thin
    2 bunches radishes, trim, wash, slice thin
    1/4 jicama or 1 medium size white turnip, peel and thinly slice
    6 green onions (greens also), sliced thin
    1 clove garlic, minced

    Recipe



    In small bowl, whisk together vinegar, lemon juice, mustard, salt, pepper and oil. Stir in parsley. At this point, the dressing and prepared veggies can be refrigerated up to 12 hours. Put mushrooms, radishes, jicama, green onion and garlic in a medium bowl. Add the dressing, toss well, and transfer to salad plates. Serves 4.
