    Meat/Fish: Mandarin Chicken Salad w/ Lime Poppyseed Dressing

    List of Ingredients

    2 large firm bananas
    1 tablespoon water
    1 tablespoon lemon juice
    4 cups bite size mixed salad greens
    2 cups bite size cooked chicken
    1 can mandarin orange, chilled and drained
    8 ounces pineapple chunks, chilled and drained
    1 cup seedless grapes
    1/2 cup coarse chopped pecans, toasted

    Recipe

    Prepare Lime and Poppy Seed dressing ( Recipe follows). cover and refrigerate while preparing the salad. Slice bananas. In a small bowl, combine the water and lemon juice. Add bananas; toss gently to coat. In a large salad bowl, place the greens, chicken, orange sections, pineapple chunks, and grapes. Add bananas. Shake the dressing well; pour over the salad. Toss lightly to coat. sprinkle salad with pecans.


    Lime and Poppy Seed Dressing:
    3 Tblsp lime or lemon juice
    2 Tblsp walnut or vegetable oil
    2 Tblsp honey
    1 Tblsp finely chopped fresh chives
    1/2 tsp poppy seeds
    Combine all in jar with tight fitting lid; cover and shake well, then refrigerate. (Will keep for 1 week).
