Meat/Fish: Kielbasa Summer Salad

1 pound kielbasa
15 ounces black eyed peas, rinsed, drained
2 medium tart apples, cut 2" pieces
1 medium green bell pepper, chopped
4 large green onions, thin sliced
DRESSING:
1/3 cup oil
3 tablespoons cider vinegar
1 tablespoon dijon mustard
2 teaspoons sugar
3/4 teaspoon pepperRecipe
Halve the sausage lengthwise and cut into 1/4 inch slices. In a nonstick skillet, brown sausage. Drain on paper towels. In a bowl, combine peas, apples, green pepper, onions and sausage. Combine dressing ingredients in a small bowl; mix well. Pour over sausage mixture and toss to coat. Cover and refrigerate for 4 hours or overnight.
