Meat/Fish: San Juan Summer Salad

List of Ingredients
3 cups cooked chicken breast, cut 1/2" pieces
3 cups cantaloupe, cut into 1/2" pieces
1 cup thinly sliced celery
1/2 cup chopped green onion
1/3 cup roasted salted cashews
DRESSING:
3/4 cup oil
1/2 cup mango chutney
1/4 cup white wine vinegar
3 medium clove garlic, minced
1 tablespoon dijon mustard
1 tablespoon soy sauce
1 tablespoon sesame oil
3/4 teaspoon Tabasco sauceRecipe
For Dressing: Place all ingredients in food processor or blender and puree until smooth. This can be prepared ahead 1 day, cover and refrigerate. For salad: combine all ingredients, and toss with enough dressing to coat. Tips: If making ahead of time, reserve cashews and dressing until just before served.
