Meat/Fish: Shrimp Salad w/ Vinaigrette

3 tablespoons cider or white wine vinegar
1 clove garlic, minced
1 teaspoon sugar
1 teaspoon grated orange peel
3 tablespoons olive oil
2 medium oranges, peeled
1 pound shrimp, cooked and peeled
1 tablespoon diced pimentos
10 cups lettuce, torn
1/4 cup sliced green onionsRecipe
In a large bowl, combine the first four ingredients. Whisk in oil; set aside. Cut oranges into 1/2" slices; cut slices into quarters. Add shrimp, pimientos and oranges to dressing; toss to coat. Cover and chill for at least 1 hour. Just before serving, toss shrimp mixture with lettuce and onions. Yield: 6 serving
