    Pasta/Potato: Orange Tarragon Chicken Pasta Salad

    List of Ingredients

    SALAD:
    1 1/2 cups uncooked bow tie or spiral pasta
    2 cups cubed cooked chicken
    3/4 cup sliced celeyr
    11 ounces mandarin oranges, drained
    1 kiwi fruit, peeled and chopped

    DRESSING:
    1/2 cup mayonnaise
    1 tablespoon grated orange peel
    3 teaspoons chopped fresh tarragon (3/4 tsp dry)
    1/4 teaspoon salt
    2 tablespoons milk or orange juice
    2 teaspoons Dijon mustard

    Recipe

    Cook pasta to desired doneness as directed on package. Drain and then rinse with cold water to cool. Drain well. Meanwhile, in large bowl,combine all remaining salad ingredients except for kiwi fruit. In small bowl, combine all dressing ingredients, blending well. Add cooked pasta to salad. Pour dressing over salad mixture; toss gently to coat. Sere immediately, or before adding kiwi fruit, cover and refrigerate until serving time. Just before serving add kiwi fruit; toss gently. Serves 4.
