    4 ounces chinese wheat flour noodles

    DRESSING:
    1/4 cup rice vinegar OR vinegar
    3 tablespoons peanut butter
    1 teaspoon finely chopped fresh garlic
    1 teaspoon finely chopped fresh gingerroot
    2 tablespoons vegetable oil
    2 tablespoons water
    1 tablespoon soy sauce
    1/8 teaspoon hot pepper sauce

    SALAD:
    1/3 cup green onions, thin sliced diagonally
    1/2 cup carrot, coarse shredded
    1 cup thin sliced napa cabbage
    1 cup thin sliced red cabbage
    1 cup fresh bean sprouts
    1/4 cup salted peanuts

    Recipe



    Cook noodles according to package directions. Rinse thoroughly with cold water; drain. In medium bowl, with wire whisk, stir together all dressing ingredients until smooth. In lare bowl toss together cooked noodles, dressing and all salad ingreidents except bean sprouts and peanuts until well coated. Cover; refrigerate at least 2 hours. Just befoe serving, stir in bean sprouts and 3 tbl. peanuts. Garnish with remaining 1 tbl. peanuts. Serves 8.
