Simple Marinated Vegetable Salad

3 medium yellow summer squash, slice 1/4" thick
1 red, yellow, orange, green bell pepper -- slice or chop
1 small red onion, thin slice, separate into rings
1 can whole baby corn, rinse, drain
1 medium carrot, thin sliced
1/4 cup white vinegar
2 tablespoons sugar
2 tablespoons water
2 tablespoons olive oil
1 teaspoon saltRecipe
In a large bowl, combine the squash, peppers, onion, corn and carrot. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over vegetables and toss to coat. Cover and refrigerate for 2 hours or until chilled. Serve with a slotted spoon.
