Sugar Snap Pea Salad

1/3 cup cider viengar
1/3 cup oil
1/3 cup sugar
1 teaspoon yellow mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 pounds sugar snap peas
1 medium sweet onion thinly sliced
separated into ringsRecipe
In a small jar that has a cover, combine all the dressing ingredients. Cover the jar tightly and shake well. Refrigerate until needed. Steam the sugar snap peas until crisp-tender, 4 to 5 minutes. Rinse with cold water and drain well. Transfer the warm peas to a bowl and add the dressing and onion. Toss well to coat the peas with the dressing, allow to cool, cover, and refrigerate for at least an hour before serving.
