    Summer Squash Salad

    16 ounces rotini or bow tie pasta, cooked
    3 cups julienne summer squash, 2" pieces
    1 1/2 cups chopped tomatoes
    1 can rinsed and drained garbanzo beans
    1 cup shreddd lowfat Mozzarella cheese
    1/4 cup chopped fresh basil
    1/3 cup lemon juice
    2 teaspoons sugar
    1/2 teaspoon pepper
    1 tablespoon red wine vinegar
    3 tablespoons olive oil

    Recipe



    Rinse and drain cooked pasta and place in large bowl. In small bowl mix basil, lemon juice, sugar, pepper, oil and vinegar. Add mixture to pasta. Toss well to coat and add remaining ingredients. Chill before serving. Serves 6
