    Buttermilk Ranch Dressing

    1 1/3 c buttermilk
    2/3 c light or fat free mayonnaise
    4 tsp cider vinegar
    1 tsp Dijon mustard
    3/4 tsp dried dillweed
    1/2 tsp dried parsley
    1/4 tsp each: salt, pepper and sugar
    Pinch Garlic powder

    In small bowl or glass jar, whisk together buttermilk, mayonnaise, vinegar, mustard, dill, parsley, salt, pepper, sugar and garlic powder. (Dressing can be refrigerated, covered, for up to 1 week.) Makes 2 cups

    Per 1 tbsp: about 20 calories, trace protein, 1.6 g fat, 1 g carbohydrate.

    VARIATIONS:

    Peppercorn Ranch Dressing: Stir 1/2 tsp crushed black peppercorns into 1/2 cup Buttermilk Ranch Dressing. This is also great as a sauce for hot or cold fish.

    Creamy Cucumber Dressing: Shred peeled cucumber to make 1/4 cup. Gently squeeze out excess water. Finely chop and add to 1/2 cup Buttermilk Ranch Dressing.
