1 cup nonfat plain yogurt
1 tablespoon vinegar
1 tablespoon olive oil
1 cup finely chopped peeled cucumber
1 teaspoon dill weed
1 clove garlic, peeled and minced
1/2 teaspoon chopped fresh mintRecipe
Combine yogurt, vinegar and olive oil in a small bowl. Whip with wire whisk until smooth. Mix cucumber, dill weed, garlic and mint into the dressing. Refrigerate until ready to serve.
Makes about 2 cups (1 serving = 2 tablespoons)
