1/4 cup silken tofu (4 oz)
2 tablespoons extra virgin olive oil
1 tablespoon cider vinegar
1 tablespoon dijon mustard
1 teaspoon honey
1/2 teaspoon poppy seeds

Combine all ingredients in food processor or blender and process until smooth. Season to taste with salt and pepper.
