Ginger Dressing

3 teaspoon rice vinegar or white wine vinegar
2 teaspoon peeled and minced ginger root
2 teaspoon fresh lemon juice
2 teaspoon light soy sauce
2 teaspoon dijon-style mustard
salt and pepper
6 teaspoon vegetable oil
1/4 cup oriental sesame oil
1 clove garlic, minced
2 teaspoons snipped fresh chivesRecipe
In a bowl combine the vinegar, ginger root, lemon juice, soy sauce, mustard, and salt and
pepper to taste. Add the oils in a stream, whisking, and whisk the dressing until blended.
Whisk in the garlic and chives, if desired. Makes 1 cup.
