    1 package sugar free lemon jello
    1 cup boiling water
    1 can (8 oz) crushed pineapple, undrained
    2 cups shredded carrots
    1/2 cup mini marshmallows
    3/4 cup cool whip Lite
    2 tablespoons fat free mayonnaise

    Recipe



    In large bowl, combine dry jello and boiling water. Mix well using wire whisk, then stir in undrained pineapple. Cover and refrigerate 15 minutes. Add carrot and marshmallows; mix well to combine, then pour into an 8x8" dish. Cover and refrigerate at least 2 hours. Just before serving, in a small bowl, combine cool whip and mayonnaise; spread evenly over top. Cut into 6 servings.
