1 can pineapple chunks in juice
1 orange
1 lemon
8 packets sugar substitute
2 tablespoons minute tapioca
6 small apples, cored and diced
2 bananas, slicedRecipe
Drain pineapple, reserving juice. Squeeze juice from orange and lemon. Combine all juices, sugar and tapioca; let stand about 5 minutes. Heat mixture in microwave for about 8-10 minutes, stirring every 2 minutes, until it thickens and tapioca is transparent. Cool. Combine apples and pineapple, then fold in cooled dressing. Immediately before serving, slice in bananas.
