Strawberry Rice Salad

List of Ingredients
1 package strawberry jello (small box)
1/2 cup boiling water
2 cups crushed pineapple, undrained
2 cups cooked rice
1 cup cool whip, thawed
3/4 cup plain nonfat yogurt
1/2 teaspoon vanilla
Recipe
In medium bowl, combine jello and water. Mix well to dissolve jello. Blend in pineapple with juice. Stir in rice. Let partially set (about 1 hour). Stir in cool whip, yogurt, and vanilla. Refrigerate for at least 1 hour. Hint: 1 1/3 c. uncooked usually makes about 2 c cooked.
