Fish/Seafood: Fresh Tuna Salad Sandwiches

4 fresh tuna steaks
1 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons sweet relish
1 sweet onion, finely diced
2 rib celery, finely diced
bunch dill,, snipped
bunch chives, chopped
salt and pepper
hamburger rolls
Recipe
Poach tuna in salted water for 3 to 4 minutes until cooked through. Flake and pull apart. Combine with mayonnaise, mustard, relish, onion and celery, herbs, salt and pepper. Spoon on rolls. Top with some sliced sweet pickles and potato chips. Yield: 2 to 4 servings
