Veggie: Grilled Portabello & Chevre Sandwich

2 tablespoons olive oil
2 cloves crushed garlic
2 large portabello mushrooms
2 slices red onion
4 slices crusty bread
4 ounces goat cheese
2 tablespoons garlic mayonnaise
lettuce
salt and pepper
Recipe
Mix olive oil with crushed garlic until smooth. Brush mushrooms and red onion with olive oil mix. Grill on both sides until done - about 5 minutes per side. Salt & pepper to taste. Grill bread on both sides. Spread one piece with mayo and the other with chevre. Fill with mushroom, onion slices and arugula. Serves 2.
