    Fish/Seafood: Grilled Shrimp Tortilla Sandwiches

    1 cup Good Seasons Roasted Garlic Dressing
    1 pound medium shrimp, cleaned
    10 ounces frozen corn, thawed
    1 red bell pepper, chopped
    1 cup shredded mozzarella cheese
    1/4 cup chopped cilantro
    16 flour tortillas (6")

    Recipe

    Pour 3/4 cup of the dressing over shrimp; cover. Refrigerate 1 hour to marinate. Drain, discard dressing. Thread shrimp onto 6 skewers. Place skewers on greased grill over medium-hot coals. Grill 5 to 6 minutes or until shrimp are pink. Remove shrimp from skewers; chop. Toss shrimp, corn, red pepper, cheese, cilantro and remaining 1/4 cup dressing. Spoon shrimp mixture onto each of 8 tortillas; top each with second tortilla. Place on greased grill over low coals. Grill 2 to 3 minutes or until tortillas are golden brown and cheese is melted, turning once.
