* 3 tablespoons grated Parmesan cheese
* 4 tablespoons LAND O LAKES® Butter, softened
* 2 teaspoons dried basil leaves
* 8 slices English muffin bread
* 4 (3/4-ounce) slices LAND O LAKES® Deli Mozzarella Cheese
* 2 small Roma tomatoes, thinly sliced
* 4 (3/4-ounce) slices LAND O LAKES® Deli Cheddar Cheese
Recipe
Stir together Parmesan cheese, 2 tablespoons butter and basil leaves in small bowl. Set aside.
To assemble each sandwich, spread 1 side of each bread slice with butter mixture. Layer 1 slice bread, butter mixture-side up, with 1 slice mozzarella cheese, 1/4 tomato slices, 1 slice cheddar cheese and 1 slice bread, butter mixture-side down. Spread top and bottom of each sandwich with remaining butter.
Heat 12-inch skillet or griddle on medium heat. Place sandwiches in skillet. Cook, turning once, until cheese is melted and bread is toasted (6 to 8 minutes).
TIP: Egg-shaped plum or Roma tomatoes are less juicy than traditional beefsteak tomatoes, making them perfect for sandwiches. Look for them in the produce section of your grocery store all year around. Store fresh tomatoes in a dark place at room temperature. Refrigerated tomatoes become mushy.
