Fish/Seafood: Herbed Lobster Roll

1 lb lobster meat
8 oz cream cheese
1/2 cup low-fat mayonnaise
1 cup coarsely-chopped parsley leaves
1 tsp Worcestershire sauce
2 tsp lemon juice
Salt to taste
Freshly-ground black pepper to taste
4 long hard rolls - (5 to 6 oz ea)
* Seafood Alternatives: bay shrimp, crabmeat
Recipe
* Pick over the lobster meat to remove any membrane or shell and set aside in a medium bowl.
* In the work bowl, of a food processor, combine the cream cheese, mayonnaise, parsley, Worcestershire sauce, lemon juice, salt, and pepper. Puree the mixture and taste for seasoning.
* Add the cream cheese mixture to the lobster and stir or combine. Split the rolls lengthwise, leaving one long side attached, and spoon in the lobster filling. Wrap securely in plastic wrap followed by foil to pack for a picnic, or enjoy right away.
* This recipe yields 4 servings.
* Comments: This is a multi-purpose sandwich idea that is just as delicious - and simple - with shrimp or crabmeat. For varied flavor, replace some of the parsley with other fresh herbs such as tarragon, chervil, basil or chives.
