1 Flank steak,about 2 lbs
1/3 c Olive or salad oil
3 tb Dry red wine or wine vinegar
3 tb Shallots or scallions minced
1 Or 2 cloves garlic crushed
1 1/2 ts Salt
1/4 ts Pepper
1/2 lb Fresh mushrooms cleaned and -sliced
3 tb Butter or margarine
1 tb Fresh lemon juice
1/3 c Chopped fresh parsley
3 lg Crusty French rolls split -and toasted
2 tb Sharp prepared mustard
Recipe
Remove any fat and outer membranes from steak. Put into a shallow dish; cover with oil, wine or vinegar, shallots or scallions, garlic, salt, and pepper. Leave to marinate 1 hour or longer, turning once or twice. When ready to serve, broil 3 or 4 inches from heat in a preheated broiler, allowing 5 to 8 minutes per side, the exact time depending on the steak size and desired degree of doneness. The steak is generally served medium rare with a juicy red interior. Cut across the grain into very thin, narrow pieces. While steak is cooking, saute mushrooms in heated butter and lemon juice in a small skillet for 4 minutes; add parsley. To serve, spread each roll with mustard; top with steak pieces and mushrooms. Serve at once. Serves 6.
