    Wraps: Lavash Roll-ups

    List of Ingredients

    16 ounces cream cheese
    8 ounces Monterey jack, grated
    1/4 cup heavy cream
    tortilla wraps
    1/2 pound ham, salami, turkey or roast beef
    1 cup fresh cleaned spinach leaves

    Recipe

    Puree cream cheese, grated Monterey jack or other mild cheese and heavy cream in food processor. Divide among 3 lg lavash (or six very large flour tortillas). Line next with spinach leaves, then layer each with 1/2 lb thinly sliced ham, salami, turkey or other cold cuts, leaving a two inch border on one side. Roll up snugly, taking care not to push ingredients out of place. May be prepared up to one day ahead, but cover with plastic wrap, chill if holding more than two hours and let stand 1 hour at room temperature before proceeding. Just before serving, secure with toothpicks (if desired) and slice 1/2 to 3/4 inch thick.
