Deli Meats: Pastrami Reuben

2 teaspoons oil
1 onion, peeled and sliced
2 tablespoons unsalted butter -- room temp
4 slices rye bread
2 tablespoons thousand island salad dressing
8 slices lean pastrami, thin slice
1/4 cup sauerkraut -- drained
4 slices Swiss cheese
Recipe
Start by heating the oil in a non-stick pan over medium-low heat. Add the onion and cook, stirring occasionally until softened and golden brown, 10 to 12 minutes, set aside. Working on a sheet of waxed paper, spread the butter on one side of each slice of bread. Turn the slices over and spread the other side with the thousand island dressing.
Cover the dressing side evenly with the onion, sauerkraut, pastrami and cheese. Cover with the remaining slices of bread, dressing side down. Press down on the sandwich to flatten it slightly. Remove the sandwiches from the wax paper and cook them in a non-stick skillet over medium-high until golden brown and the cheese is melted, about 3 minutes per side. Cut in half and serve immediately.
