Veggie: Roasted Eggplant & Pesto Sandwiches

List of Ingredients
* 1 medium to large sized eggplant
* 2-3 TB olive oil
* salt (Fleur de Sel is ideal, if you have it)
* pesto
* 2 marinated roasted red peppers (from a jar)
* 1 baguette, sourdough or sweet, whichever you prefer
Recipe
1. Pre-heat oven to 400°.
2. Slice the eggplant into 1/2" wide round slices.
3. Brush both sides of each slice with the olive oil.
4. Place slices on a nonstick baking sheet and sprinkle with the salt (not too much!)
5. Roast eggplant in oven for approximately 35 minutes or until nicely browned on both sides.
6. Meanwhile, slice the baguette into 3 or 4 sections. Cut diagonally to make it look prettier, then slice them horizontally to separate into top and bottom pieces.
7. Spread pesto on bread.
8. Slice the peppers into very long thin slices and place 2-3 in each sandwich.
9. Place several slices of eggplant on top of the peppers.
