Cheese: Toasted Goat Cheese Sandwiches

4 thick slices french bread
2 tablespoons goat cheese
2 tablespoons milk
1 tablespoon small capers
1 tablespoon fine chopped basil
1/4 cup sun-dried tomatoes, packed in oil -- drain and fine chop
Recipe
Preheat oven to 350ºF. Place French bread on baking sheet. In small bowl, beat together goat cheese and 1 to 2 tablespoons milk to make a spreadable mixture. Spread cheese mixture on all 4 slices bread. In bowl, stir together capers, tomatoes and basil. Gently spread mixture over each bread slice. Toast bread in oven until cheese begins to melt, about 5 minutes. Remove from oven and serve immediately. Variation: Substitute thinly sliced home grown tomatoes (Italian tomatoes, if available) Put French toast spread with cheese in oven and let cheese melt. Remove from oven & top with a tomato slice. Drizzle with balsamic vinegar and sprinkle with chopped basil.
