Homemade Roasted Tomato Salsa

1 1/2 pounds whole small tomatoes, unpeeled
1 fresh tomato (keep for the end)
1/2 medium red onion, chopped
1/4 cup chopped fresh cilantro
2 fresh jalapenos, seeded
2 cloves garlic
1 1/2 teaspoons salt
2 tablespoons cider vinegar
Recipe
Heat the broiler. Place the tomatoes (all except the one you reserve) on a baking sheet. Broil the tomatoes for 15 minutes or so, turning occasionally, until the tomatoes are soft and the skins split and turn dark in spots. This step really intensifies the flavor. Let the tomatoes cool. In a blender, puree the tomatoes whole (with skins and cores), with the cilantro, jalapenos, garlic, salt and vinegar. Chop the reserved tomato, chop the onion, and stir both into the salsa at the end. This makes it chunkier, and gives it a bright fresh flavor. This salsa not only goes very well with chips, but as a condiment for tortilla dishes.
